These little sugar-free gems are easy enough to make but a few steps are required so (somewhere) in this post you’ll find a brand new video that shows the whole process in detail.
These yummy little bites are great straight out of the freezer or refrigerator!
Although they will be soft (not a puddle on a plate just soft) they are dreamy at room temperature!
This recipe for Turtle Cheesecake Bites Low Carb THM S is a super tweak… not to be confused with a regular tweak, of my original 2014 version of Chocolate Covered Cheesecake Bites

I do give alternatives to this sweetener in my recipes but only because they are more easily available because they won’t yield the same wonderful results. I will try to give you two different ways of purchasing this sweetener within this post but here’s my favorite. #Afflink:

The following recipes were originally formulated using aff link: Lily’s sugar-free chocolate baking chips but they are expensive through Amazon. I was able to get them through my local natural store at half the price shown in the link.

For the caramel layer: For the cheesecake layer: For the chocolate shell: Assemble the cheesecake bites: See the video for easy instructions. Refrigerate until firm-- 30-60 minutes. *NOTES I prefer the texture of the caramel sauce without the xanthan gum but if the butter should appear to separate from the rest of the sauce, whisking in the xanthan gum will bring it back together and keep it there. I use the same brands of refined coconut oil as the unrefined so it is good quality, but no coconut flavor -not Louana! The cheesecake bites may be eaten either straight from the freezer, fridge or at room temp. My ice trays have 16 slots so two pieces to a serving will give you 8 servings. Yes, the powdered sweetener is gentle sweet as usual my #1 choice!

I just have Super Sweet. Would that taste okay in this recipe? If so, how much would you use?

Hi Maria! I just don’t know if it’ll be okay in this recipe or not. Truvia and Pyure might work though. But if you’d like to try super sweet it’s 4 times sweeter than gentle sweet so just divide the amount for each gentle sweet amount needed by 4.Good luck.

To be honest, that looks like more than 8 Tablespoons of cream cheese, but of course it’s difficult to tell just by looking at a picture. Do you happen to have the number of ounces of cream cheese you used? I’m loving the recipes I have seen so far. Thanks for posting this lovely candy. Can’t wait to try it.

I just made this recipe last night, and WOW! I used to make candy all the time before I went low carb, so I was expecting it to take a long time to complete the dish. These candies made up quickly, even with all the different components. And so utterly delicious I can’t even believe it. Mine were not as pretty as the picture on Teresia’s website, but my family doesn’t care. They still disappeared quickly.
